Once the menu is set, the sourcing begins. We work with the markets, fishmongers, and producers we trust most — bringing in ingredients at their peak, in the quantities your event calls for. There's no grocery list for you to send, no delivery window to track, no last-minute substitution to manage. By the time we arrive at your home, that work is already finished.
On the day of the event, your kitchen becomes our station — quietly, respectfully, and on a tight clock. Courses are cooked from scratch, plated as they go out, and timed to the rhythm of the room. Nothing is reheated, nothing is held. Your guests can stay where they are, or wander in and ask what's on the burner — both are part of how the evening feels.
Plates are served with attention to the flow of the evening — not rushed, not stalled. When the last course is cleared, we reset the kitchen completely: dishes washed or loaded, counters wiped down, surfaces returned to the state we found them in. The only sign we were there is what's left on the table.
